What Is Wok Cooking

I love Chinese cuisine. Now I guess that explains my fascination for wok cooking. I have a good collection of woks in different sizes for my cooking and love what wok cooking can do to food -the taste and flavor. With all the Thai cooking recipes and videos I have been watching the last few days, I think the woks are soon going to witness the taste of a whole new cuisine.

Wok cooking is one that uses a high degree of heat and requires the cook to be both careful and also alert. This is both in terms of personal safety and also getting the food cooked right. Wok cooking has come to be a popular choice across the globe. Ask me, initially it was takeaways from my favorite Chinese restaurant and then my friend introduced me to the world of Chinese cooking. Ever since I have been hooked to it. I find it a healthier option to cook at home and definitely cheaper (especially during these tough times a great way to delicious home cooking).

Tips to great wok cooking:
1-Wok cooking is fun, healthy and tasty. Cooking in a wok is done at a very high temperature and therefore, ensures that the food is tasty and does not loose out on its nutritional value.

2-While deciding to cook in a wok, ensure that you have all your veggies chopped and the other ingredients ready. With cooking taking place at very high temperatures it is difficult to chop and cook at the same time (you would end up burning your food).

3-Wok cooking is mostly about stir frying. The trick is to keep stirring. I like the shape that a wok has – deep and high sides- this prevents the food from falling out (of course please do ensure that you have enough knowledge and practice before you try the tricks that your chef at the restaurant does).

4-Wok cooking is generally done on a high flame, however, using your stove on full power or even a big enough hot plate can do wonders.

5-Woks are delicate, use them with care. They need some maintenance to preserve them in pristine condition. Just a little care while using and washing and you could enjoy wok cooking with tasty vegetables, meat and fish that make for a grand treat.

Unlike the general concept, wok cooking can be used for anything from stir frying, deep frying to steaming and boiling. While deep frying ensure that you stick to the safety rules as the oil is at a very high temperature and woks have a comparatively smaller base. You can even put water into your wok and place your steamer on it and enjoy the tasty dim sums. There is a lot to the traditional wok cooking, a highly versatile kitchen tool this is one worth exploring. Have fun!!

Hcg Diet Maintenance Snacks

Criteria for Healthy Snacks on the HCG Maintenance Phase

Many dieters begin to get nervous when their HCG round is coming to an end. They worry about what to eat in the Maintenance Phase. During this time, you are trying to achieve a new weight set point. Its very important to continue keeping sugar and starches out of your diet. After the initial three weeks on this phase of the HCG Diet, you will begin to slowly add sugars and starches back into your diet.

There is no need to be nervous. Remember these simple rules when selecting snacks for the HCG Maintenance Phase.

When selecting snacks you need to pay more attention to sugar than fat. The only exception is the natural sugar found in fruits. You will, however, avoid very sweet fruits like melons, grapes, etc. during this time. The only time you want to choose a low-fat or non-fat option is when you buy dairy. With dairy products, the fat has not been replaced with sugar in order to make the product low-fat or non-fat. Be mindful though with yogurts and watch the sugar content. Preferably go with a Greek style of yogurt with no sugar, no honey or other sweeteners added. Remember you can add Stevia to sweeten it.

Many recipes can also be adapted to using Stevia instead of sugar. There are a large number of resources online for low carbohydrate/sugar-free recipes that will work for the HCG Diet Maintenance Phase. You can even find cookbooks especially for cooking with Stevia.

Here is a short list of healthy and safe HCG Maintenance Phase snacks:

Fruits and veggies
Cottage cheese with real fruit
Celery with cheese or peanut butter
Apple with peanut butter
Almonds or peanuts
Cheese sticks or cubes
Celery filled with tuna or chicken salad
Berries with fat-free milk
Strawberries and Greek style yogurt
Its best to include a protein with every snack.

If you want to try a snack that is a combination type such as snack bars, trail mix, yogurts, etc., follow these guidelines. Good, healthy combo snacks need to have 20 carbohydrates or less. Fiber should be 2 or more; sugar needs to be 10 or less; and protein should be at least 4. To sum up, the less carbohydrates and sugar, the better the snack is. The higher the protein and fiber content the snack has the better.

Katsudon

In my experience since getting home there are not that many Restaurants or Shops that make a good Katsudon. Most of the ‘Katsudon’ that I have bought in Australia have left me wondering if they have ever seen a real Katsudon before. Since it’s so difficult to buy here is a recipe for you to make it yourself!

Katsudon is a member of the Donburi family which means ‘bed of rice’. All of the Donburi family consists of different kinds of food served on a bed of rice. In this case it is delicious pork cuts on a bed of rice.

Ingredients

7-8 cups of cooked rice.

Remember Japanese rice cookers steam rice a little differently to boiling it in a bot.
Vegetable oil (for frying)
4 pork chops without bones, pounded thin (about 1-1.5cm)
Salt & Pepper for seasoning

Coating (for the pork cuts)

1-2 cups of Panko (Japanese Breadcrumbs)
3 tablespoons flour
1 beaten egg

Broth

6 tablespoons Soy Sauce
6 tablespoons Sugar
4 tablespoons Mirin (Japanese Rice Wine used for cooking)
3 -4 eggs, beaten
8 tablespoons green peas (optional if you like your greens, most Katsudon I ate went without)

1 cup Dashi broth or 1 cup Water
Directions:

Pour vegetable oil about 1-inch deep in frying pan or wok and heat to 170C or until a few breadcrumbs dropped into the middle of the oil surface immediately.

If it’s not already Trim the fat off the pork and pound it to the desired thickness (1-1.5cm)

Sprinkle with salt and pepper. Dust first with flour, and then dip into the beaten egg, then into the panko crumbs.

Fry in the oil until light brown-this should take 3-4 minutes.

Drain on paper towels and then cut into 2-3cm strips.
Mix the broth ingredients together in a bowl.

Then heat about 25% of the broth in a separate skillet, bringing it just to a boil.

Add the slices of 1 pork cutlet and cook for one minute.

When the broth has fully coated the cutlet, pour one portion of the beaten eggs into the skillet and stir.

If you like your greens add a portion of green peas and cook for 30 seconds more.

Place one serving of rice into a bowl (preferably a deep bowl, then remove the cutlet and egg mixture from the skillet and place over the rice.

Repeat this for each of the remaining desired servings.

Then chow down this amazing Japanese dish!
